Autumn recipes that will win you over

Nothing smells of autumn as an aromatic veggie soup that will warm you in the tastiest of ways or a sweet and sour sauce resonating the spicy Indian cuisine. Let your kitchen be oozing with irresistible odours, we can’t wait to try out these two autumn recipes!

Autumn tomato and veggie soup

Ingredients:

  • 1 spoon of olive oil
  • 1 medium size onion, sliced
  • 1 celery, sliced
  • 2 cloves of garlic, chopped
  • 1-2 medium size potatoes, peeled and sliced
  • 1 courgette, diced
  • 1 red pepper, finely diced
  • 1L of chicken or vegetable stock
  • 1 package of Rajska Sunstream cherry rajčica or Rajska Campari, finely diced
  • Tomato sauce as appropriate
  • 1 cup of small-size pasta
  • ½ cup of frozen peas
  • Parmesan cheese

Preparation:

Heat the oil in a stewing pan over medium-high heat. Add onion, garlic and celery. Simmer and stir for 3 to 5 minutes or until the ingredients have softened. Add courgette and pepper. Simmer and occasionally stir for 4 to 5 minutes. Add stock, potato, diced tomatoes, tomato sauce and 2 cups of cold water. Cover and continue to simmer over low heat. Leave for 10 minutes or until the veggies have softened. Add pasta and peas and simmer for another 10 minutes until the pasta is done. Sprinkle with some grated Parmesan cheese and serve.

Chutney sauce with tomatoes

Ingredients:

  • 1kg of tomatoes, peeled and diced
  • 750 g of apples, peeled and diced
  • 375 g of brown sugar
  • 250 g of sliced onion
  • 250 g of raisins
  • 1 green pepper, diced
  • 350 ml of balsamic vinegar

Preparation:

Put all the ingredients into a large stewing pan and stew over medium heat. Stir occasionally until the sugar has dissolved. Simmer unlidded for 45-50 minutes until the apples have softened. Let it cool and pour the mixture into a sterilized glass container. Serve this sauce with various dishes, cheeses or simply use it as a spread on a slice of bread and enjoy.
