Avocado and tomatoes – a super healthy match

Avocado is another superfood that perfectly complements tomatoes making thus a super healthy and delicious match.

Avocado originates from Central and Latin America and belongs to the group of fruits (just like tomatoes). Unlike other fruits that are mostly composed of carbohydrates, avocado mostly contains fats, and this is precisely the reason why it is so healthy. Specifically, it has a high amount of healthy fats – i.e. monounsaturated fats that are extremely valuable for the reduction of blood cholesterol and for keeping your heart healthy.

Avocado has more than 15 valuable nutrients: minerals, fibres, vitamins and essential amino acids. It has a high percentage of proteins compared to other fruits – there are 4 g of proteins in one avocado. It contains high 14 % of fibres, which are needed for longer satiety and regular digestion. It is a rich source of vitamin E, and it contains more potassium than a banana, which is usually known for being a good source of it. It is a good source of vitamin C, and it also contains vitamin K which helps in building bones.

Its taste is not intense, and the texture is creamy. Therefore, it is perfectly paired with many foods in both savoury and sweet dishes. When buying avocado, choose softer fruits to use it fully. Once sliced, it oxidizes very fast and is therefore recommended to spray it with lemon juice, wrap it in foil and store in refrigerator for not more than 2-3 days.

Pasta with avocado and cherry tomatoes

Ingredients:

  • 100 g of wholegrain pasta of your choice
  • Several Sunstream cherry tomatoes
  • 2 ripe avocados
  • One lemon juice
  • Pinch of garlic
  • 3 teaspoons of olive oil
  • Spices as per choice: salt, pepper, basil
  • Parmesan to your liking

Preparation:

Blend the skinned and de-pitted avocado and add lemon juice, chopped garlic, spices and olive oil. Continue to blend until the texture has become creamy. Pour the sauce over boiled pasta, grate some Parmesan cheese and add fresh sliced cherry tomatoes.

Chicken, avocado, tomato and bacon salad

Ingredients for two persons:

  • 200 g of chicken breasts
  • 200 g cherry tomatoes
  • 1 avocado
  • 100 g of bacon or pancetta
  • 1 onion
  • 2 cloves of garlic
  • 2 boiled eggs
  • Olive oil and balsamic vinegar to your liking
  • 1 teaspoon of mustard
  • Salt and pepper

Preparation:

Grease chicken breasts with olive oil, add salt and pepper, unpeeled garlic and put it in the pre-heated oven at 180°C for some 30 minutes or until the meat is done. For dressing, squeeze the baked garlic from its peel so that you get a paste, add olive oil, balsamic vinegar, mustard, salt and pepper and stir. Dice pancetta finely and fry on a pan for several minutes until it becomes crispy. Dice the remaining ingredients: chicken, tomatoes, avocado, boiled eggs. Slice the onion into thin slices, stir, pour the dressing on top, stir again and serve.
